Meringue kisses

These little pink meringue kisses make a lovely gift, or try serving them with ice cream and raspberries for a simple Valentine’s dessert.


2 egg whites

200g caster sugar

pink food colouring gel


-Heat the oven to 130ºC / 110º fan / gas mark 1/2. Line a large baking sheet with baking paper.

-In a spotlessly clean bowl, whisk the egg whites until doubled in size. Add the sugar, 1 tablespoon at a time, whisking until glossy and holding stiff peaks.

-Using a piping bag with a star nozzle, draw four lines of food colouring gel inside the bag, from the nozzle upwards, spacing them apart. Fill the bag with meringue.

-Holding the bag vertically, gently squeeze a small about of meringue onto the baking parchment, quickly pulling upwards to form a peak.

-Bake in the oven for 30-35 minutes, or until the meringue bases come away clean from the baking paper.
